Commonly known as black cod, the sablefish is not a cod species. Sablefish is also known as Alaska cod, butterfish, coalfish, and skilfish. The mild, sweet, buttery flavor and a delicate white flake of the sablefish is becoming increasingly popular and is sought after by chefs and consumers.
Sablefish can be baked, poached, broiled, grilled (use a grill basket), or pan-fried. Whole fish (or large fillets) can be roasted with the skin left on. We saute ours in a small amount of butter and extra-virgin olive oil and season it lightly with a small amount of salt & pepper. The fish will be cooked when it becomes opaque yet is still moist on the inside.
The sablefish has a high fat and oil content and has one of the very highest contents of Omega-3.
The sablefish also freeze well and the skin is edible.
