Grilled Salmon on Cedar Plank

1 cedar plank (untreated)
3 pounds salmon fillet, boned with skin on
1 tablespoon black pepper
1/2 teaspoons of cayenne, ancho chile powder, paprika, garlic powder, and sea salt
1 teaspoon minced rosemary
1/4 cup honey
1/4 cup rice vinegar

Directions:

Preheat grill. Soak cedar in water while grill warms up. Place salmon skin down on the plank and season with the herbs and spices. Marinate for five minutes before brushing evenly with honey.
Place the plank and salmon on the center of the hot grill and shut the lid. Cooking time is 8-10 minutes per inch of thickness. If the plank catches on fire, dose with a small amount of water. Be careful when removing the plank from the grill.
