Halibut with Shrimp Sauce


1 & 1/2 to 2 lbs fresh halibut
5 & 1/2 tbsp. butter
1/2 lb shrimp
1/2 cup white wine
1 & 12/ tbsp. flour
1/4 cup cream
salt to taste
Cayenne pepper to taste
1/3 cup coarse cracker crumbs

Place halibut in fry pan with 2 tbsps of butter; sear slowly over low heat until halibut turns white. Place in backing dish. Cook shrimp in the wine until pink and place the shrimp over the halibut. Make white sauce of 2 tbsps butter, flour cream, salt and Cheyenne pepper; pour evenly over the halibut and shrimp. Melt remaining butter; stir in cracker crumbs. Spread over casserole. Bake for 20 min. in 400 degree oven. Casserole may be assembled in advance, if desired. Yield: 4 servings.
