Halibut Tacos with Watermelon Salsa

Cut fresh halibut into bite size pieces. Dip in egg and flour then pan fry until golden brown.

Heat corn tortillas then add halibut topped with grated cheddar cheese, shredded green cabbage, watermelon salsa, squeeze of lime (the lime is essential).

Watermelon Salsa
Watermelon
Lemon juice
Cilantro
Jimica

Cut watermelon into bite size chunks, finely chop cilantro and add, cut jimica into small pieces and add fresh lemon juice to taste.

Easy and delicious.
