Josey's Shrimp Bow Ties

1 pound bow tie pasta
1/2 cup olive oil
1/4 cup fresh lemon juice
1/4 cup fresh basil
2 cups fresh baby spinach, washed
2 cloves garlic
salt & pepper to taste
6 plum tomatoes, chopped
1/4 cup sun-dried tomatoes, thinly sliced
1 pound large cooked shrimp

Cook the pasta according to the package directions. drain, rinse in cold water and drain again.
In a large serving bowl, combine the remaining ingredients: mix, well. Add the pasta and toss until well combined. Serve, or cover and chill until ready to serve.
