Seafood Soup
4 T butter
1/4 cup grated onions
4 T flour
2 T tomato paste
4 cups milk
1 pint half and half
1/2 pound fresh crabmeat
1/2 pound raw shrimp, peeled and deveined
1/2 cup dry cooking sherry
1 tsp lemon juice
2 tsp Old Bay seasoning
1 tsp seasoned salt
2 tsp Tabasco sauce or your favorite hot sauce
salt and fresh ground pepper to taste
Melt butter in pan and sauté onions for about 3 minutes.
Add flour and tomato paste and mix well. Slowly add milk, just a
little at a time. When mixture is hot, add half and half, crabmeat,
shrimp, sherry, lemon juice, Old Bay, seasoned salt, Tabasco sauce,
salt, and pepper.
Serve hot.
