Fresh Seafood Recipes
Seafood Stew.....One serving
Whole Butter 1 oz Shrimp, 40/50 P &D Raw 2 oz
White Wine 1 &1/2 oz Scallops 2 oz
Paprika 1/8 tsp. Oysters, Raw 2 oz
Celery Seed 1/8 tsp. Crab Meat 2 oz
Clam Juice 8 oz Black Mussels 3-4 ea
Lemon Juice 1 tsp. Clams 3-4 ea
Worcestershire 1/8 tsp. Salt & Pepper To taste
Tabasco 2 oz Whipping Cream 2 oz
Cocktail Sauce 2 oz Whole Butter 1 oz
Get pan hot; add butter and melt. Add white wine, clam juice, cocktail sauce, celery seed, worcestershire sauce, paprika, tobasco sauce, lemon juice, salt and pepper, and reduce. Add mussels and clams; cook until they open. Add shrimp, scallops, crabmeat, and oysters (add oysters last). Bring to a boil. Finally, add whipping cream and boil for approx. one minute. Finish with last 1 oz of butter and garnish with fresh chopped chives. Serve hot. Enjoy!!!!
