Tropical Salmon Grill
1/3 cup bottled lime juice
1/4 cup honey
1/4 cup soy sauce
1/4 cup vegetable oil
2 cloves garlic, finely minced
1 tbsp ground ginger
1/4 tsp ground pepper
1 & 1/2 lb salmon fillets
1 & 1/2 tbsp cornstarch
Combine all ingredients except fish and cornstarch; mix well. In plastic bag or shallow dish, place fish. Add soy mixture, cover and marinate in refrigerator for one hour. Remove fish from marinade; reserve marinade. Grill or broil salmon until salmon flakes with fork. In a small saucepan, stir cornstarch into reserved marinade. Cook and stir over medium heat until thickened. Serve with salmon. Makes 4 servings.
